If the class is limited to learning tools, shell, programming (for
some things), or similar end-user activities, FC2 would work (it
wouldn't be ideal, but manageable).  Heck, any Unix variant from the
last 20 years or so could be useful.  However, if it is intended for
any kind of administrator oriented education, yeah, FC2 would be a
very poor choice.
