For Grub, try appending the value to the kernel line in the grub config.  Here 
is mine from one of my machines:

title Red Hat Linux Stock Kernel (2.4.18-3)
	root (hd0,0)
	kernel /vmlinuz-2.4.18-3 ro root=/dev/hde3 hdh=ide-scsi vga=795

notes:
::hdh is my cd-rw burner, set to use the ide-scsi functions.
::vga set to 795 was the only way for me to get my all-in-wonder 128 pro 
working with Linux and XFree86.  You may wish to use your own vga mode.
