We have set one up here at work.  You didn't mention the details of what
you want in a kiosk so it is hard to give any advice.  Ours brings up
Netscape and will only display pages from the server we have chosen.  I
have one multiple key sequence set up as a back-door.  Otherwise in order
to close the browser you have to pull the power cord.  We pretty much
followed the kiosk HOWTO at http://www.linuxdoc.org/ with a few
modifications.
