Exim + Courier IMAP/POP3 (for Maildir++ folders) or UofW IMAP/POP3 (for
old-fasioned mbox folders)

Sendmail: yuk.  Be prepared to buy several crates of Tylenol.
Postfix: fairly nice but not as flexible as Exim; very fast
Qmail: unsupported by author; missing *tons* of functionality in the core
   distribution compared to Sendmail, Exim, or Postfix.  Much of that can
   be "fixed" by patches, but I'm hesitant to put *so* many patches that
   may not be well tested together in one place.

Nope - I tend to avoid both.

Old-fasioned tar straight to tape :)  I'm using Ecrix drives.

Full backup: don't miss a thing that way and our entire data set fits on
one tape.

We also have a backup server off-site using rsync & ssh to mirror our
file, web, mail, and DNS servers.
