There should not be any drive size limit specific to the Web server.  If
you have the right hardware, the largest IDE drive made should work OK with
Linux, right?

I've run software RAID with Linux.  I set up level 5, but if I were doing
it today I would consider Level 1, as reads are quicker and disks are
cheap.  (But of course it all depends on the specific situation.)
