Yeah, I thought about that statement only after I hit submit. ;)

Nonprofit is obviously the best choice, but there's still the matter of what kind of entity to create.  LLC with managers or Corporation with Directors?

Pretty sure non-profit only means there's no money left in the business name. 
Eg, people who do work can still get paid.
